Ingredients:

  • 2 large beef marrow bones, split lengthwise
  • Salt and pepper to taste
  • 1 cup red onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 cup assorted mushrooms, thinly sliced
  • 1/2 cup white wine vinegar
  • 1 tablespoon sugar
  • Petite lettuce leaves for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 450°F (230°C).
  2. Prepare Marrow Bones:
    • Place the split marrow bones on a baking sheet. Season with salt and pepper. Roast in the preheated oven for 15-20 minutes or until the marrow is soft and easily spoonable.
  3. Prepare Onion Marmalade:
    • In a pan, heat olive oil over medium heat. Add sliced red onions and cook until softened.
    • Stir in balsamic vinegar and brown sugar. Reduce heat and simmer until the onions caramelize and form a marmalade-like consistency.
  4. Prepare Pickled Mushrooms:
    • In a separate pan, combine sliced mushrooms, white wine vinegar, and sugar. Bring to a simmer and cook until the mushrooms are lightly pickled. Remove from heat and let them cool.
  5. Assemble the Dish:
    • Once the marrow bones are roasted, carefully scoop out the marrow onto serving plates.
    • Spread a generous spoonful of onion marmalade over the marrow.
    • Scatter pickled mushrooms around the plate.
    • Garnish with petite lettuce leaves for freshness.
  6. Serve:
    • Serve the Roasted Bone Marrow with Onion Marmalade, Pickled Mushrooms, and Petite Lettuce immediately. It pairs well with crusty bread.

This Roasted Bone Marrow dish is a decadent treat with the rich, buttery marrow complemented by the sweet and tangy notes of onion marmalade and pickled mushrooms, while the petite lettuce adds a touch of freshness. Enjoy the luxurious flavors of this culinary masterpiece!
