Ingredients:

For the Mochi Dough:

  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup sugar
  • 1 cup water
  • Potato starch or cornstarch for dusting

For the Filling:

  • Fresh strawberries, hulled
  • Sweetened red bean paste (azuki bean paste)
  • White chocolate, chopped into small pieces

For Strawberry Cream:

  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons strawberry puree (from fresh strawberries)

Instructions:

1. Prepare the Mochi Dough:

  1. In a heatproof bowl, whisk together glutinous rice flour and sugar.
  2. Gradually add water, whisking continuously to create a smooth mixture.
  3. Cover the bowl loosely with plastic wrap.
  4. Microwave the mixture on high for 2-3 minutes, stopping to stir every minute until the dough is translucent and elastic.
  5. Dust a clean surface with potato starch or cornstarch.
  6. Transfer the mochi dough onto the dusted surface and let it cool slightly.

2. Assemble the Ichigo Mochi Daifuku:

  1. Divide the mochi dough into small portions, about the size of a golf ball.
  2. Dust your hands with starch and flatten each mochi portion into a disc.
  3. Place a small amount of sweetened red bean paste in the center of each disc.
  4. Add a piece of white chocolate and a fresh strawberry on top of the red bean paste.
  5. Gather the edges of the mochi and seal to encase the filling. Pinch and twist to seal properly.

3. Make Strawberry Cream:

  1. In a chilled bowl, whip the heavy cream until it forms soft peaks.
  2. Add powdered sugar and strawberry puree. Continue whipping until stiff peaks form.

4. Serve:

  1. Serve the Ichigo Mochi Daifuku on a plate.
  2. Dollop a spoonful of strawberry cream on the side or on top.
