Ingredients:

For the Lobster:

  • 1 1/2 lbs lobster meat, cooked and chilled, diced into bite-sized pieces
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mango, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

For the Chipotle Aioli:

  • 1/2 cup mayonnaise
  • 1 tablespoon adobo sauce from canned chipotle peppers
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Salt to taste

For the Guacamole:

  • 2 ripe avocados, mashed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 small jalapeño, finely chopped (optional)
  • Juice of 1 lime
  • Salt and pepper to taste

Additional Toppings:

  • Crispy fried corn tortillas (tostadas)
  • Shredded cabbage
  • Hot sauce of your choice

Instructions:

1. Prepare the Lobster:

  • In a bowl, combine the chilled and diced lobster meat with red onion, mango, cilantro, lime juice, salt, and pepper. Toss gently to combine. Refrigerate until ready to assemble.

2. Prepare the Chipotle Aioli:

  • In a small bowl, whisk together mayonnaise, adobo sauce, minced garlic, lime juice, and salt. Adjust the seasoning to taste. Set aside.

3. Prepare the Guacamole:

  • In another bowl, combine mashed avocados, red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper. Mix well and set aside.

4. Assemble the Tostadas:

  • Place a crispy fried corn tortilla (tostada) on a serving plate.
  • Spread a generous layer of chipotle aioli over the tostada.
  • Spoon the chilled lobster mixture over the aioli layer.
  • Top with shredded cabbage and a dollop of guacamole.
