Ingredients:

For the Shumai Filling:

  • 1 lb ground chicken
  • 1/2 cup finely chopped water chestnuts
  • 3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • Wonton or shumai wrappers

For the General Tso’s Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • 2 tablespoons water

For Garnish:

  • Sesame seeds
  • Chopped green onions
  • Chopped cilantro
  • Cucumbers

Instructions:

1. Prepare the Shumai Filling:

  • In a large mixing bowl, combine ground chicken, water chestnuts, green onions, garlic, soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, ground ginger, and black pepper. Mix well until evenly combined.

2. Assemble the Shumai:

  • Take a wonton or shumai wrapper and place a small spoonful of the chicken mixture in the center.
  • Wet the edges of the wrapper with water and gather the sides, creating pleats to seal the top.
  • Repeat until all the filling is used.

3. Steam the Shumai:

  • Arrange the shumai in a steamer basket lined with parchment paper.
  • Steam for about 12-15 minutes or until the filling is cooked through.

4. Make the General Tso’s Sauce:

  • In a small saucepan, whisk together soy sauce, hoisin sauce, rice vinegar, honey or brown sugar, cornstarch, sesame oil, and crushed red pepper flakes (if using).
  • Cook over medium heat until the sauce thickens, stirring continuously. Add water to adjust the consistency if needed.

5. Coat the Shumai:

  • Once the shumai is cooked, brush each piece with the General Tso’s sauce or toss them gently in a bowl with the sauce.

6. Garnish:

  • Sprinkle sesame seeds, chopped green onions, and chopped cilantro on top of the General Tso’s Chicken Shumai.

7. Serve:

  • Arrange the shumai on a serving platter and serve with additional sauce on the side for dipping. Place on top of the sliced cucumber.
