For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 3/4 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups buttermilk
- Gel food coloring (red, orange, yellow, green, blue, purple)
For the Frosting:
- 1 1/2 cups unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup whole milk
- 2 teaspoons vanilla extract
- Freeze-dried SKITTLES, crushed, for decoration
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
2. Prepare the Cake Batter:
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another large bowl, cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients.
- Divide the batter evenly into six bowls.
3. Add Food Coloring:
- Tint each bowl of batter with a different gel food coloring to create the rainbow spectrum.
4. Layer the Batter:
- Starting with one color, pour the batter into the center of the prepared pan. Allow it to spread naturally.
- Repeat with the remaining colors, layering each on top of the previous one.
5. Bake:
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
6. Prepare the Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add powdered sugar, milk, and vanilla extract. Beat until smooth and fluffy.
7. Assemble the Cake:
- Once the cakes are completely cooled, level the tops if necessary.
- Place the purple layer on a serving plate and frost the top. Continue stacking and frosting with each color.
- Frost the sides and top of the entire cake with the remaining frosting.
8. Decorate with Crushed SKITTLES:
- Crush freeze-dried SKITTLES into small pieces.
- Sprinkle the crushed SKITTLES over the top of the cake for added flavor and a colorful finish.
9. Slice and Serve:
- Once the cake is assembled and decorated, slice and serve to reveal the vibrant rainbow layers.
