Ingredients:
- 1.5 lbs pork belly, sliced
- 1 bunch broccoli rabe, trimmed
- 1 cup pickled peppers, sliced
- 8 slices sourdough bread
- 1 cup raclette cheese, shredded
For the Salsa Verde:
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 2 tablespoons capers, drained
- 1 tablespoon Dijon mustard
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
Instructions:
- Preheat the grill: Preheat your grill to medium-high heat.
- Grill the Pork Belly: Season the pork belly slices with salt and pepper. Grill the pork belly slices for about 5-7 minutes per side or until they are cooked through and have a nice char. Set aside.
