Mushroom and Spinach Risotto Recipe

Ingredients:

  • 1 cup Arborio rice
  • 8 oz mushrooms, sliced (cremini or button mushrooms work well)
  • 2 cups fresh spinach, chopped
  • 4 cups vegetable or chicken broth, kept warm
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté Mushrooms:
    • In a large pan or skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until they release their moisture and become golden brown. Remove mushrooms from the pan and set aside.
  2. Cook Onion and Garlic:
    • In the same pan, add the remaining olive oil. Add finely chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Toast Arborio Rice:
    • Add Arborio rice to the pan and stir to coat the rice with the onion and garlic mixture. Toast the rice for about 2 minutes until the edges become slightly translucent.
  4. Deglaze with Wine (Optional):
    • If using wine, pour it into the pan, stirring continuously until the wine is mostly absorbed by the rice.
  5. Begin Adding Broth:
    • Start adding warm broth to the rice one ladle at a time. Stir continuously and allow the liquid to be absorbed before adding the next ladle of broth. Continue this process until the rice is creamy and cooked to al dente texture. This usually takes about 18-20 minutes.
  6. Add Mushrooms and Spinach:
    • Once the rice is almost cooked, add the sautéed mushrooms and chopped spinach to the pan. Stir to incorporate the vegetables into the risotto.
