1. Chocolate Tart

Ingredients:

For the Tart Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/3 cup unsalted butter, melted

For the Chocolate Filling:

  • 1 1/2 cups dark chocolate, finely chopped
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter

Instructions:

  1. Prepare the Tart Crust:
    • Mix chocolate cookie crumbs and melted butter in a bowl.
    • Press the mixture into the bottom of individual tart pans or a large tart pan.
    • Chill in the refrigerator while preparing the filling.
  2. Make the Chocolate Filling:
    • Heat heavy cream in a saucepan until it just begins to boil.
    • Pour the hot cream over the chopped chocolate. Let it sit for a minute, then stir until smooth.
    • Add butter and stir until fully incorporated.
    • Pour the chocolate mixture into the chilled tart crust.
    • Refrigerate for at least 2 hours or until set.

2. Vanilla Bean Cheesecake

Ingredients:

For the Cheesecake Base:

  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 vanilla bean, scraped (or 2 teaspoons vanilla extract)

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tablespoons sugar

Instructions:

  1. Prepare the Crust:
    • Mix graham cracker crumbs, melted butter, and sugar.
    • Press the mixture into the base of a springform pan.
    • Bake at 325°F (163°C) for 10 minutes. Allow to cool.
  2. Make the Cheesecake Base:
    • In a large bowl, beat cream cheese and sugar until smooth.
    • Add eggs one at a time, beating well after each addition.
    • Add sour cream and vanilla bean scrapings (or vanilla extract) and mix until smooth.
    • Pour the cheesecake mixture over the cooled crust.
    • Bake at 325°F (163°C) for 45-50 minutes or until the center is set.
    • Allow to cool before refrigerating for at least 4 hours or overnight.

3. Strawberry Mousse

Ingredients:

  • 1 1/2 cups fresh strawberries, hulled and chopped
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons gelatin
  • 2 tablespoons water
  • 1 cup heavy cream, whipped

Instructions:

  1. Prepare the Strawberry Puree:
    • Blend strawberries, sugar, and lemon juice until smooth.
    • Strain the mixture to remove seeds.
  2. Bloom Gelatin:
    • In a small bowl, mix gelatin with water. Let it sit for a few minutes to bloom.
  3. Heat Strawberry Puree:
    • Heat a portion of the strawberry puree in a saucepan until warm.
    • Add the bloomed gelatin to the warm puree and stir until the gelatin dissolves.
  4. Combine and Fold:
    • Combine the gelatin-strawberry mixture with the remaining puree.
    • Allow it to cool to room temperature.
    • Gently fold in the whipped cream.
  5. Assemble:
    • Spoon the strawberry mousse on top of the vanilla bean cheesecake in serving glasses or bowls.
    • Refrigerate for at least 2 hours before serving.
