Ingredients:
For the Pastry:
- 1 sheet puff pastry (store-bought or homemade)
- 1 cup fresh blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Purple Icing:
- 1 cup powdered sugar
- 2-3 tablespoons milk or water
- 1/2 teaspoon vanilla extract
- Purple food coloring
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Blueberry Filling:
- In a bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the blueberries are coated. Set aside.
3. Roll Out the Puff Pastry:
- If using store-bought puff pastry, roll it out on a lightly floured surface to your desired size and thickness. If using homemade pastry, roll it out accordingly.
4. Assemble the Tart:
- Place the rolled-out pastry on a parchment-lined baking sheet.
- Spoon the blueberry filling onto the center of the pastry, leaving a border around the edges.
5. Fold and Seal:
- Gently fold the edges of the pastry over the blueberry filling, creating a rustic tart shape. Pinch the edges to seal.
6. Bake:
- Bake the tart in the preheated oven for 20-25 minutes or until the pastry is golden brown and the blueberries are bubbling.
7. Make the Purple Icing:
- While the tart is baking, prepare the icing. In a bowl, whisk together powdered sugar, milk or water, and vanilla extract until smooth.
- Add purple food coloring gradually until you achieve the desired shade of purple.
8. Ice the Tart:
- Allow the tart to cool slightly before drizzling or spreading the purple icing over the top.
9. Serve:
- Slice the blueberry-filled pastry tart into portions and serve warm or at room temperature.
10. Optional Garnish:
- Optionally, you can sprinkle additional fresh blueberries on top or add a dusting of powdered sugar.
Enjoy this delightful Blueberry-filled Pastry Tart with its vibrant purple icing. It’s a perfect balance of flaky pastry, sweet blueberries, and a colorful, sweet glaze. Perfect for brunch, dessert, or a sweet treat any time of the day!
