For the Chocolate Mousse:

  • 8 oz dark chocolate, chopped
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Chantilly Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For Assembly:

  • 1 can (about 14 oz) morello cherries, drained
  • Dark chocolate shavings or curls for garnish

Instructions:

1. Chocolate Sponge Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract. Beat on medium speed until well combined.
  4. Stir in boiling water until the batter is smooth. The batter will be thin.
  5. Pour the batter evenly into the prepared pans.

  1. In a chilled bowl, whip the heavy cream until soft peaks form.
  2. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

4. Assembly:

  1. Place one layer of chocolate sponge cake on a serving plate.
  2. Spread a layer of chocolate mousse on top of the cake.
  3. Add a layer of morello cherries on the mousse.
  4. Place the second layer of chocolate sponge cake on top.
  5. Frost the entire cake with the remaining chocolate
