Ingredients:
For the Sushi Rice Donut:
- 2 cups sushi rice, cooked and seasoned with rice vinegar, sugar, and salt
- 1/4 cup rice vinegar (for seasoning)
- 2 tablespoons sugar (for seasoning)
- 1 teaspoon salt (for seasoning)
For the Sushi Donut Toppings:
- Fresh salmon, thinly sliced
- Fresh tuna, thinly sliced
- Cooked shrimp, peeled and deveined
- Cucumber, julienned
- Sesame seeds (black and white)
For the Wasabi Aioli:
- 1/4 cup mayonnaise
- 1 teaspoon soy sauce
- 1 teaspoon wasabi paste
For the Sriracha Aioli:
- 1/4 cup mayonnaise
- 1 teaspoon sriracha sauce
For the Eel Sauce:
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon sugar
- 1 teaspoon cornstarch dissolved in 1 tablespoon water
Instructions:
1. Prepare Sushi Rice Donut:
- Mix rice vinegar, sugar, and salt in a bowl. Gently fold the seasoned mixture into the cooked sushi rice.
- Allow the rice to cool to room temperature.
- With damp hands, shape the rice into a donut on a serving plate, leaving a hole in the center.
2. Arrange Toppings:
- Place slices of fresh salmon, tuna, and cooked shrimp on top of the sushi rice donut.
- Add julienned cucumber around the rice.
- Sprinkle a mix of black and white sesame seeds over the toppings.
3. Make Wasabi Aioli:
- In a small bowl, mix mayonnaise, soy sauce, and wasabi paste until well combined.
4. Make Sriracha Aioli:
- In another small bowl, mix mayonnaise and sriracha sauce until well combined.
5. Make Eel Sauce:
- In a saucepan, combine soy sauce, mirin, and sugar. Bring to a simmer.
- Stir in the cornstarch mixture to thicken the sauce. Remove from heat and let it cool.
6. Assemble:
- Drizzle the wasabi aioli and sriracha aioli over the sushi rice donut.
- Drizzle the eel sauce over the fish and toppings.
7. Serve:
