Ingredients:
- 4 medium-sized beets, peeled and sliced
- 2 tablespoons verjus (unfermented grape juice)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 ounces goat cheese, crumbled
- 2 cups petite lettuce, washed and dried
- 1/2 cup blackberries
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/2 cup pecans, chopped
- 1 tablespoon butter
- 1 teaspoon ground cinnamon
- Pinch of cayenne pepper (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Beets:
- In a bowl, toss the sliced beets with verjus, olive oil, salt, and pepper until well coated.
- Roast Beets:
- Place the seasoned beets on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until tender. Allow them to cool slightly.
- Prepare Blackberry Gastrique:
- In a small saucepan, combine blackberries, balsamic vinegar, and honey. Simmer over medium heat until the blackberries break down and the mixture thickens into a syrupy consistency. Strain to remove seeds and set aside.
- Prepare Spiced Pecans:
- In a skillet, melt butter over medium heat. Add chopped pecans, ground cinnamon, and cayenne pepper (if using). Stir until the pecans are coated and toasted. Remove from heat and let them cool.
- Assemble the Dish:
- Arrange the roasted beets on a serving platter.
- Scatter crumbled goat cheese over the beets.
- Toss petite lettuce on top.
- Drizzle blackberry gastrique over the salad.
- Sprinkle spiced pecans across the dish.
- Serve:
- Serve immediately as a delightful appetizer or side dish.
